Dutch Oven Chili and Stowaway IPA

Here’s a great base chili that you can augment to your taste/heat. We were camping in Maine and decided that this would provide a great meal. This will feed up to 6 people and cost a little over 20$ to gather all of the groceries.

After heating up the dutch oven, we added some butter and the peppers, onions & garlic to soften up for about 10 min over medium heat.

Take the dutch oven off the heat and add in your hamburger and sausage meat. Add in your spices. If you can find a spice mix for 2$, go for it! Otherwise we are using essentially a lot of chili powder.

Put it back on the heat and let it cook for 15 minutes or until the meat is more or less cooked. Remove from heat and add in your beans & tomatoes.

We used three types of beans and a combination of diced tomatoes. If you can find cans that are already spiced, get those. Finally add in a can of beer. We are using a can of Baxter Brewing Stowaway IPA, a 6.9% beer that has a nice sweet malt profile with a citrus flavour. This should go well with the peppers and spices.

Stir everything well and add it back to the hot coals. We are going to let this simmer for up to 2.5 hours. Plenty of time to enjoy a few brews.

2 tablespoons olive oil
1 large red onion, diced
1 medium red bell pepper, diced
1 medium yellow bell pepper, diced
4 cloves garlic, chopped
1 pound lean ground beef
8 ounces Italian sausage, casing removed
1/4 cup chili powder
1 tablespoon ground cumin
1 tablespoon dried oregano
One 4-ounce can tomato paste
One 12-ounce bottle beer
One 28-ounce can diced tomatoes
One 14-ounce can diced tomatoes
One 15-ounce can black beans, drained and rinsed
One 15-ounce can kidney beans, drained and rinsed
One 15-ounce can pinto beans, drained and rinsed
