We try out a deep dish pizza using the cast iron dutch oven. We got two parts to this: the crust & toppings to prepare. I tried to get everything done in the dutch oven, but you’ll need a few bowls.
The dough is pretty simple and can be made after you’ve lit the coals.
3 cups of flour
1 cup of warm water
3 tbs of sugar
1 tsp of salt
1 package of yeast
Mix in the ingredients into a bowl and start making the dough, this will make for a thick crust to fit around a 12 inch dutch oven. Let the dough rise for 20 minutes before rolling it out to lay into the dutch oven.
For toppings, I’ve selected the usual: onion, garlic, mushroom, hamburger, green peppers, pepperoni and olives. You can use pizza sauce or tomato paste.
With the dutch oven not quite hot, lay in the dough and toppings. Then get it hot to cook for 20 minutes. Then add in the fresh toppings and cheese for another 10 minutes.
A good craft beer pairing would be an IPA or Double IPA. Here I’ve selected an East Coast IPA from Picaroons in New Brunswick. This beer should have some nice herbal, malt & bitterness flavours which should go well with this.
